Sticky Greek walnut cake with cinnamon syrup

You will need:
For the cake
- 75g plain flour
- 1tsp baking powder
- Pinch salt
- 250g walnut pieces
- 5 egg yolks
- 1tsp vanilla essence
- 320g caster sugar (200g/120g split)
- 4 egg whites
For the syrup
- 250g sugar
- 300ml water
- 3/4 tsp cinnamon
What to do:
- Whisk egg yolks, vanilla and 120g of sugar until pale and stiff
- In another bowl, whisk egg whites until peaking and stir in remaining 200g of sugar
- Fold the two egg mixes together
- In another bowl, mix flour, baking powder, salt and nuts, and when done fold everything together so far
- Line a 20cm spring form cheesecake tin with baking parchment, pour in mix and bake at 180C for 40 to 45 minutes
- For the syrup, place all ingredients in a pan and simmer for 10 minutes
- When cake has cooled, poke a lot of holes in top and pour over half of the syrup and serve with the remaining syrup
